Fujianese Grocery Stores on Chun Yeung Street 春秧街福建食材店

The Ming Sau Building on Chun Yeung Street was built in 1965. There are four shops next to the stairs of the building for rent to different merchants who sell Chinese pastries and dried foods. Including the Yat Sun Store, Hing Yuen, Kau Gei and Sing Fuk. Three of these stores Yat Sun Store, Hing Yuen and Kau Gei mainly sell Fujianese foods, including Fujianese pastries such as steamed sponge cake, sweet bean paste Kuih and Mua Lau. Except of Fujianese pastries, the ingredients commonly used in Fujian cuisine can also be found here, such as smaller oysters, Fuzhou fish balls, dried shrimp and dried fish, these are all seafood as Fujian locate in the southeast coast of China. Fujianese oyster omelette is famous in Fujianese cuisine. It is omelette made with oysters, shallots, garlic, sweet potato flour and eggs. The difference between Fujianese oyster omelette and Teochew oyster omelette lies in the ingredients used. Teochew oyster omelette uses duck eggs and tapioca flour, so Fujianese oyster omelette is softer and chewier.

 

Fujian steamed sponge cake, also known as bowl cake, with the main ingredients are rice milk and sugar, it is named because of the fermented rice milk is poured into a bowl and steamed. Fujianese people call various rice cakes as Kuih. In Fujianese recipes, it can see rice cakes made of stem rice or glutinous rice, with various fillings. Salty Kuih has bai ba Kuih filled with peanuts and fatty pork, and Taro Kuih filled with Taro. There are many types of sweet Kuih, including green bean Kuih and white sugar Kuih, which are filled with green beans, white sugar and winter melon sugar respectively. There are also sweet Kuih with hawthorn, red dates, bean paste, peanuts and other materials as filling. As for Mua Lau, it is a special Fujianese pastry, frying the Kuih stuffed with peanuts and sugar, and then coated with a layer of white sesame seeds. The Fujian ingredients store in Ming Sau Building all sells Mau Lau, which shows that it is a common food for Fujianese.

在春秧街的明秀大廈於1965年建成,在大廈樓梯旁有四間舖位出租予不同商戶,售賣中式糕點與小型乾貨,包括日新商店、興源、球記和成復。其中日新商店、興源和球記都以售賣福建食品為主,如發糕、豆沙粿、麻荖等糕點。除了糕點,還有售福建菜常用的食材,如蠔仔、福州魚丸、蝦乾、魚乾等,都是彰顯福建東南沿海特色的海鮮乾貨。福建蠔仔煎在福建菜中很著名,是採用了蠔仔、葱蒜、番薯粉和雞蛋製成的煎餅。福建蠔仔煎與潮州蠔仔煎的分別在其用料,潮州蠔仔煎採用鴨蛋和木薯粉,所以福建蠔仔煎更為軟和有嚼勁,

 

福建發糕又稱碗糕,因製法把發酵米漿倒在碗中蒸熟而命名,主要材料有米漿和糖。粿是福建人對各種米糕的統稱,在福建食譜中,可以看到有不同由梗米或糯米所制的米糕,配以各種內餡,鹹粿有以花生、肥豬肉內餡的白八粿和以芋頭為餡的芋粿。甜粿種類繁多,常見有綠豆粿、白糖粿,分別以綠豆與白糖、冬瓜糖為餡,另外也有配以山楂、紅棗、豆沙、花生等材料的甜粿。至於麻荖,是一種特色福建糕點,將以花生和糖為餡的粿糕油炸,再在外皮沾上一層白芝麻而成。在明秀大廈的福建食材店都有售賣麻荖,可見其是福建人的常見食品。
